EDWARDSVILLE — Just Right Eating, a healthy meal delivery service based out of Springfield, Illinois, is opening a retail location in Edwardsville in the Ironworks Plaza.
Just Right Eating will offer six different meal plans and grab n’ go in the Edwardsville location. People can sign up online or in the store. At the time of sign up they can choose if they want to have food delivered or available for pick up at the store.
Each meal plan offers the option to receive the default menu or go online and create your own menu with more than 70 items each week from which to choose, some with customizations. Products include snacks, entrees, breakfast and desserts. All items are healthy, balanced, portioned, fresh and nutritionally dense.
Just Right Eating offers gluten free, vegetarian, pescatarian and other meal types. Its mission is to offer products and services to help people achieve their goals — weight loss, healthy eating, athletic performance, and/or prevent/manage disease — by offering meals that include a balance of lean protein, heathy fat, complex carbs, sodium appropriate and natural sugar.
Just Right Eating is scheduled to open Jan. 4 at 2329 Plum Road, Edwardsville. There will be special events to let people learn about its products and services.
Stephanie Johnson, an Edwardsville native, opened the concept in January 2011 after several years of putting together the logistics in a 400-square-foot facility in Taylorville. She has a Master of Science in exercise physiology and is a nutritionist and author of Just Right Eating. Her concept is designed to offer all products and services that would help individuals to eat better. Just Right Eating carries a selection of goods she has chosen and created. She also serves as a fitness expert and nutritional guide for customers who need support for weight loss, athletic performance, Celiac’s Disease, diabetes, heart health and nutritional balance
